Pancakes
Ingredients
2 C all purpose flour
3 t baking powder
3 T sugar
1/2 t salt
2 large eggs
2 T melted butter (cooled slightly)
1/2 t vanilla
1 1/2 to 1 3/4 C milk
Directions
1. Mix dry ingredients together
2. Beat eggs, whisk in butter and vanilla. Whisk in 1 1/2 C milk
3. Gently combine wet and dry ingredients
4. Add more milk if needed to get a pourable batter
Notes: fun add-ins or substitutions might include whole wheat pastry flour, another type of sugar (like brown or confectionery), cinnamon, nutmeg, almond extract
